The Kevin John Chardonnay is Cullens flagship white from their biodynamic vineyards. The wine is named in honour of Vanya Cullens father, the late Kevin John Cullen. Grapes are harvested on a flower or fruit day and whole-bunch pressed to obtain the highest quality juice. It is then barrel fermented with native yeasts in French oak barriques and matured for approximately 7 months in one- third new and two-thirds seasoned oak barrels.

This emblematic domain in Saint-Aubin is also a major producer in the Côte d’Or, and other quality areas of Burgundy. Their expertise has been handed down from father to son since the 19th century, along with groundbreaking work to help the appellation Saint-Aubin to shine. Domaine Roux was started in 1885 with a plot of vines bought by Louis Roux in the village of Saint-Aubin. His grandson Marcel Roux, born in 1927, played a pivotal role in the development of the domain, extending the holdings to over 25 hectares in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, Meursault and Santenay. He was a leading light in establishing the reputation and value of the Saint-Aubin appellation around the world. The Saint-Aubin appellation extends over an altitude vineyard that produces white wines of good quality, and whose reputation continues to grow. Its area is 1.6 square kilometres, on an area set back from those of Puligny and Chassagne. The wine landscape is very hilly and is therefore home to several climates with very variable exposures and soils. Local appellations and wines classified in Premier Cru are spread over four zones. This Saint-Aubin has a beautiful coloration with golden highlights. When young, it combines aromas of white flowers, flint, green almond, and orange-flower. Richer fragrances come with age: beeswax and honey, marzipan, ambergris, and cinnamon. This is a firm and flattering wine - it becomes fleshier and fuller with time. A legacy since 1734, Champagne Taittinger is the largest eponymous family owned Champagne House and one of the top, independent champagne brands in the world. This family of growers cultivates the second largest vineyard in the Champagne region. The composition of the house’s cuvées is a result of an intuitive and complex process, one which the Taittinger family know how to create and sustain; a Champagne which is completely unique. The Taittinger Comtes Blanc de Blancs 2007 is a lively champagne with a light, abundant bubble. There is a bouquet on the nose of pears and fresh cut flowers and flavours of lemon zest and fresh pineapple. A delicate balance of finesse and aromatic intensity.

Pierrick Laroche, the proud owner of Domaine des Hâtes, continues the legacy of his family's estate located in the picturesque village of Maligny, in the north-west sector of Chablis. Established by his father in the 1970s, Pierrick's family vineyard holdings have gradually expanded over time, resulting in the current size of around 33 hectares. After obtaining a degree in oenology from Beaune, Pierrick embarked on a journey to gain valuable experience by traveling the world and undertaking various internships. Armed with knowledge and a deep passion for winemaking, he returned home to take over the family vineyards and start producing his own wines. Pierrick's cellars, ingeniously built into the side of a hill in the village, allow for much of the winemaking process to be conducted by gravity ensuring gentle handling of the grapes. The vinification takes place traditionally in stainless steel tanks, while some of the Premier and Grand Cru wines undergo a small portion of aging in used barrels, allowing for a full malolactic fermentation. One of his oldest vineyard plots, Les Châtillons, planted in the early 1970s, sits just behind the hill of the Grand Crus and showcases the meticulous use of barrel aging, which adds complexity and depth to the cuvée. In 2016, Pierrick expanded his range by starting a small négoce operation, sourcing must from friends who predominantly farm on the left side of the river. This addition includes premier crus such as Beauroy, Beauregard and Vau de Vey, as well as the grand cru of Bougros. In 2019, Pierrick inherited 8 acres of vines from his father-in-law in the southern sector of Chablis, around the village of Courgis. Pierrick’s parcel comes from the western end of Bougros, towards the top of the hill where the slope is only about 5%. Vinified in stainless steel, it was matured for 8 months in one old 800 litre barrel. Bougros is the last Grand Cru on the western side of the hill and enjoys a south to south-westerly exposition. Penfolds Yattarna Chardonnay displays an initial bouquet of slate and wet stone, with nuances of lightly roasted almonds. Subtle hints of citrus, shrouded by nectarine and nashi pear fruits. Camille was the ingenious widow at the helm of Louis Roederer from 1932 to 1975, successfully steering it through all the important events of that time. Camille had many strong cards up her sleeve: wines from the finest Champagne terroirs, a collection of crus that her husband Léon had shrewdly acquired after the phylloxera crisis. These exceptional plots in Aÿ, Avize, Cramant, Le Mesnil-sur-Oger, Mareuil-sur-Aÿ and Cumières are the treasure troves and foundations of Louis Roederer’s unique style. Their still red and white wines are an authentic expression of the Champagne terroirs that Camille held so dear. Frédéric Rouzaud wanted to pay homage to the great-grandmother whose playful spirit he had so admired. He therefore decided to dedicate this collection of single-vineyard still wines to Camille, perpetuating the Champagne House’s inventive spirit. This new collection is the result of a twofold motion; a glance backwards, to the past, in homage to ancestor Camille; and a gesture to the future, to that which Nature offers and to receive it in order to render it even more beautiful. By working closely with the vines, using solar viticulture and bespoke vinification, they are able to reveal a new dimension hidden in their champagne terroirs. To craft this Chardonnay single-vineyard white wine, the team at Louis Roederer needed to find the most suitable hillside that would give an elegant wine with depth, structure and great style. Volibarts, the historical 55-ares, southeast-facing plot in Le Mesnil-sur-Oger, where the old vines grow gently and slowly, seemed to be the ideal choice. Their quest for complexity and a certain tannic character can only be achieved through bespoke vinification. This Chardonnay strikes just the right balance between depth and purity, resulting in a sophisticated composition that draws itself out with exceptional freshness. The 2020 season followed a similar trajectory to that of 2019: a mild, wet winter followed by a dry summer with several heatwaves, admittedly less extreme than in 2019, but which had an impact on the vines. Fortunately, a rather dull month of June brought us a wet interlude between two dry periods. Despite the hot spells and the impression of constant sunshine, the 2020 campaign ended up with relatively normal temperatures and sunshine levels. These continental weather conditions, but with “normal” annual averages, allowed us to produce ripe and well balanced wines. Deep golden yellow hue. Bouquet of yellow fruit (Mirabelle plums), dried nuts (almonds), wheat and roasted hazelnuts. The oaky notes are delicately interwoven into the wine's bouquet, giving an impression of a delicious, noble reduction. The palate is concentrated and caressingly soft with a big, rich, rounded and oily texture. The mid-palate reveals a delicate, sappy texture combined with the lovely mineral acidity that is the hallmark of this wine, while the texture of the oak lengthens the palate and creates a very savoury finish. Oaky notes delicately interwoven into the wine's bouquet, giving an impression of a delicious noble reduction.

Created in 1940 and formerly known as Coche-Bizouard, the Domaine Fabien Coche cultivates all the nobility of the great wines of Burgundy. The Domaine Fabien Coche uses traditional methods for the production of its wines: vineyard work, farming, bottling, every step is done so as to ensure production of exception. Coming from 7 parcels of beautifully situated vines owned by the estate all within Meursault just below the village. This wine is whole bunch pressed then raised in a 3000 litre foudre before being moved back to stainless steel for 6 months in tank and bottled with no fining or filtration in January after a total of 16 months on lees. This is clearly not an average Bourgogne blanc with weight texture and character way above its humble appellation label. A Bourgogne blanc that delivers freshness and attractive Chardonnay fruit yet is also very complex and fine.
