Few places seem to posses the divinely ordained right to produce Bordeaux’s other iconic export, Sauternes, quite like Clos Haut-Peyaguey. Across 12 hectares of plateau-topping Premier Cru Classé vineyard, Semillon (and a smidge of Sauvignon) grapes patiently wait out summer for the noble rot to set in. We’re talking about botrytis, of course. Once it does, the sweetest grapes are handpicked for vinification before being sent for a French oak siesta. The result is one of the world’s most revered sweet white wines. Unctuous and syrypy; floral and fruity; jammy and spicy: trés magnifique!

Cockburns 10 Year Old Tawny has a bright tawny red colour. On the nose lively candied fruit aromas, combine with toffee, caramel and honey. On the palate beautifully rounded, with delicious mature dried fruits and hints of walnuts and almonds, exquisitely mellow and a long luscious finish.

Almost black in colour. A pronounced and delicious bouquet of the essence of sweet raisins. The taste is very sweet, smooth, pronounced and delicous just like dried raisins or sweet grape juice. This is a very sweet dessert wine consumed on its own or with rich, fruity puddings. Also classically used as the sauce for one of the famous desserts of Jerez: ice cream with Pedro Ximénez Sherry. “Particularly floral and aromatic on the nose, with notes of lemon balm, elderflower, dusty notebooks, apple blossom and grapefruit peel. The aromatics hit the dryness. On the palate it morphs into a more traditional dry Vermouth, with bay leaf and thyme, before a saline finish.

Regal Rogue Bold Red is one of the worlds first dry Red vermouths (a semi-dry Aperitif) led by aromatic spice and rich dried fruit. Marrying a HunternValley Semillon with Barossa Valley Shiraz with native Pepper berry, Wattle seed and Native Thyme followed by Cinnamon, clove, star anise, nutmeg and ginger.

From the grand masters in Port comes Taylor's 10 year old tawny from Portugal. It is derived from maturation in 630 litre casks and is noted for its delicate wood notes combined with gentle scented, sweet ripe red fruits. Displays lovely fresh lemon, spice, floral and caramel notes with a hint of honey. Drier than typical Aussie tawnies, but very enjoyable with power and a very long finish.

A superb value wine for its rich and sweet 'muscaty' and raisin flavours with the lightness and freshness of the foundation Rutherglen style. Perfect match chocolate pastry. The colour is deep orange amber with floral aromas of crushed rose petal, lavender and orange blossom. The palate has rich raisins with subtle oak and great length.

Widely regarded as one of Australia's benchmark fortified wines, the Penfolds Grandfather Rare Tawny rightfully lays claim to such a title. High quality blending stock has been lovingly matured in small oak casks, and creates a wine of immense complexity and depth.

Ebony in colour with iodine highlights. The aromas are reminiscent of figs and raisins on the nose. Enormously sweet, velvety and soft on the palate, well balanced, with a very long finish.
