The Dalmore 25 Year Old Single Malt Scotch Whisky

The Dalmore distillery was founded by Alexander Matheson in 1839, a merchant adventurer determined to create an exceptional single malt whisky. In 1867, descendants of Clan Mackenzie took control of the distillery. One of their first changes was to adorn every bottle of The Dalmore with the stag – a guarantee of peerless quality. The 12-point Royal Stag proudly adorns each bottle of The Dalmore, encapsulating the distillery’s regal legacy, dating back to 1263. The emblem was bestowed upon Colin of Kintail, the first chieftain of Clan Mackenzie, after he saved the life of King Alexander III of Scotland from the fury of a charging stag. The idiosyncratic collection of stills at the distillery creates a unique new make spirit – robust and fruity, particularly well-suited for longer and more complex maturation. This allows the whisky makers to ensure each cask of spirit reaches its full potential. Richard Paterson, a pioneer in the art of cask curation, was the creative force behind The Dalmore for nearly five decades. He lit the way for current Master Whisky Maker Gregg Glass who continues an unbroken chain of visionary whisky makers, always pushing boundaries to mature the spirit in the rarest and most exalted of casks. Hand selected casks, from the world's finest bodegas and wineries are expertly curated to create a sumptuous and layered whisky of legendary finesse. The Dalmore 25 Year Old was first introduced in 2013, following the distillery's tradition of being matured in an extensive selection of casks, The spirts for the Dalmore 25 was initially aged in American white oak, before being hand-divided into 25 year old Palomino Fino sherry butts and first-fill bourbon casks. After these two steps the whiskies are married in carefully selected bourbon barrels before before finished in Tawny Port pipes from Portugal. The nose is full of aromatic exotic fruits, citrus, vanilla pods, treacle toffee and fig cake. On the palate are flavours of Madagascan vanilla pods, thick treacle toffee and chocolate truffles with a finish of maple syrup, dark chocolate and spiced gingerbread.

Bruichladdich The Classic Laddie Unpeated Single Malt Scotch Whisky

At the Bruichladdich distillery, the foundation for their Classic Laddie has not set in stone recipe but is instead a distilling philosophy. They have no interest in uniformity or consistency year to year, but the provenance and variety of their barely shapes the spirits combined with their ever-increasing ranges of casks sourced to evolve the flavours. Therefore each batch will be slightly different and unique. This whisky has the colour of sunlight on fields of early summer barley. Aromas of barley sugar with hints of mint come across the nose, leading to freshly cut flowers. With a little addition of water caramelised fruits come through with honey and lemon drops. A refreshing and refined palate with sweet oak and barley blending together. A beautiful combination of brown sugar, ripe green fruit, and sweet malt. Isle of Jura 10 Year Old Single Malt Scotch Whisky

Lying just to the East of Islay, off Scotland's west coast, Jura is one of Scotland's most spectacular but least known islands. The Isle covers 36,692 hectares and rises to a height of 785m. The name Jura has several meanings : “two brothers Dih and Rah”, “island of yew trees”, and “island of red deer”. However, with a human population of under 200 and about 5000 red deer, (the deer out number the people by around twenty five to one), expert opinion tends towards the latter. The Jura whisky is produced from water from Loch A'Bhaile Mhargaidh (Market Loch) and ground malted barley. The water is not peaty as the loch is high in the hills. The wash is distilled twice in pot stills. High necks on the stills give a light spirit. The whisky gains a little weight and richness by being matured in a mixture of American oak and Sherry casks. The 10 year old Isle of Jura is a medium-bodied malt with the character and texture of a west Highland whisky - accessible with a hint of spice and fruitiness. Unlike some of its heavier Islay cousins, Isle of Jura is only lightly peated. Tasting note: Nose: Oily, lightly piney, earthy, salty, dry. Palate: Sweetish, soft, malty, oily, slowly developing a slight island dryness and saltiness. Finish: A little malty sweetness and some saltiness. Glenmorangie The Nectar D'or Single Malt Scotch Whisky ( )

Thirty years ago, Glenmorangie innovated in the art of extra-maturation, transferring spirit first matured in ex-bourbon casks, into ex-wine casks so that it could gain further layers of flavour. For The Nectar d'Or, the whisky is finished in barriques from Sauternes: the most famous sweet wine of France. This whisky develops its rich, dessert-like flavours of white chocolate, cr me de caramel, with hints of coconut. Almond croissants flecked with ginger and honey.

Using some of the rarest casks that have been carefully matured in Traditional American and European Oak in The Balvenie warehouses, Malt Master David C. Stewart MBE creates to craft a bold marriage of extraordinary character. Rich and refined; intense honeyed oak and rich fruit create a complex layer of sweetness and spice; then warm notes of ginger and citrus are revealed. Bottled at cask strength.

GlenAllachie 10 Year Old Strength Single Malt Scotch Whisky (Batch 7)

The GlenAllachie Distillery was designed in 1967 by William-Delme Evans and built by Mackinlay McPherson. This was the fourth distillery designed by Evans and was created to be almost full gravity fed to run on reduced energy. The first production run for the distillery was in February 1968 and began with just two stills, further increasing to four after just six months. GlenAllachies very first bottling of The GlenAllachie 10 Year Old Cask Strength happened by chance. In 2017, whilst reviewing parcels of stock from 2007 and 2008, their Master Distiller Billy Walker was so delighted by the balance and depth of the samples that he immediately decided to add a younger expression to our core range. Their fourth batch was awarded ‘World’s Best Single Malt’ at the World Whiskies Awards 2021, so the bar has been set high as they introduce their sixth release. The GlenAllachie Cask Strength Batch 7 is a combination of Pedro Ximénez and Oloroso sherry puncheons along with a small quantity of Virgin Oak and Rioja casks. The resulting whisky bursts with indulgent notes of of ripe plums, dark chocolate and sticky raisins, all coupled with classic GlenAllachie honeyed charm. Batch 7 is bottled at 56.8%, non chill filtered and natural colour.

Balvenie Port Wood 21 Year Old Single Malt Scotch Whisky

To create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines. Here it is sampled regularly by The Balvenie Malt Master David C. Stewart MBE to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt whilst preserving its original characteristics. Considered by many to be David’s finest creation, this whisky is one of his proudest achievements and has won an array of highly coveted industry awards since its release in 1996. A perfume of fruity and ripe raisin notes is backed by a nuttiness on the nose. The palate is refined with remarkable character, it is creamy and silky with fruit, honey and spice notes and a long, gentle nutty finish.
