St. Laurent Gin

The Gin St. Laurent is a breath of sea air laden with salt, powerful floral and herbaceous notes interspersed with a pine-wood aroma reminiscent of Quebec’s boreal forest. This gin is complex, resulting from an improbable union of aromatics from the four corners of the globe and algae of the St. Lawrence. A first floral and herbaceous approach gives way to notes of pinewood followed by citrus scents, pastry flavours, and a peppery hint. The laminar alga, also called Neptune’s harness, gives the Gin St. Laurent its characteristic greenish colour and a soft mineral and slightly iodised finish.

Le Gin de Christian Drouin Carmina Gin

Better known as a Calvados producer, Guillaume Drouin continues exploring new flavour associations in his small batch gins. Seeking a perfect match with apple and juniper, Drouin has signed off on a new blend devoted to red berries. A "one plant at a time" distillation policy lets Drouin keep adjusting proportions so as to obtain the best possible result. Tasting note: [2018 edition] Clear. Pure, lifted aromas of apple sauce, ripe raspberries, fresh orange peel and earthy juniper. Drops a notch in intensity after 2-3 minutes air contact. Delicious fruity / floral delivery combines elderflower, semi-ripe blackberries and refreshing citrus peel to great effect. Ends delicately minty, spicy, expertly balanced with fine astringency. Roku is Japanese for "Six" which refers to the six Japanese botanicals used. Cherry blossoms, cherry leaves, green tea (sencha), refined green tea (gyokuro), sansh pepper, and yuzu are utilized along with eight other traditional gin botanicals. Smooth and oily, the gin has a rich character as it coats the tongue. Theres a fleeting glimpse of cherry blossom and traditional notes before the tea and tannic notes take over.

Dodd's Organic London Dry Gin

First created in 2013, Dodd's is a unique marriage of two separate distillations; the bulk of the botanicals are distilled in a relatively small, 140-litre copper alembic still called 'Christina'. Then, the distillation of the more delicate botanicals (such as raspberry leaf) takes place in a small, bespoke 'Cold Vacuum' still, christened 'Little Albion'. The two spirits are blended for several weeks before bottling. The team's attention to detail extends to exquisite individually numbered, letterpress labels, which are printed on an old Heidelberg press and attached to each bottle by hand. Maybe the finest Dry Martini ingredient available in Australia today.
