Prohibition Christmas Gin ( Release)

It all began in 2015 when two mates from Adelaide hatched a crazy plan to start a gin distillery. One had a history in the food & beverage industry, the other – a graphic designer – passionate about creating brands. From humble beginnings in an inner-suburbs back yard garage to becoming an Adelaide institution, the Prohibition brand soon became a success. Prohibition Christmas Gin is fast becoming a hallmark of Australian Yuletide traditions, and their 2022 vintage is no exception. As always, it is perfect served over ice, in a Christmas French 75, shaken with foam and citrus, or drizzled on Christmas pudding, custard, or ice cream for a festive epicurean dessert. The 2023 Christmas Gin is a delightfully bright & decadent expression of our most festive spirit. Lashings of figs from the Adelaide Hills are elevated with cherries & late harvest Chardonnay grapes.

Komasa Hojicha (Green Tea) Japanese Gin

Komasa Gin is the craft gin label proudly presented by Komasa Jyozo, a shochu distillery in Kagoshima, Japan with over 130 years of distilling history. Gin and shochu both share the fact that they are distilled spirits. Drawing on decades of distilling expertise and know-how accumulated through making shochu, the distillery unveiled a new line of gins in 2018. Komasa Jyozo uses their rice shochu as the base for Komasa Gin, to which they add juniper berries and as few other ingredients as possible in order to let the main botanicals shine on their own. Komasa Jyozo’s goal is to utilize and express the natural fragrances and flavours of their quality ingredients to the fullest. With Komasa Gin, they hope they have hit upon a revolutionary style of gin that is eminently easy to drink and perfect for everyone. A wonderful tea-infused gin from Komasa Jyozo, the Hojicha expression is infused with juniper berries, shochu, Japanese cypress and roasted tea leaves from Kagoshima, which is one of Japan’s most famous tea producing regions. Roasting the green tea means that the caffeine bitterness is eliminated, making for a more aromatic, mellow flavour. Pair the gin with soda or even hot water in the same way you would with tonic for an intriguing, fragrant tipple. Roasted leafy green tea alongside earthy juniper, leading into a touch of sweetness and a fragrant, woody finish.

Sacred Sloe Gin

Sacred Sloe Gin is a bottle of organic sloe gin that has been created by micro-distiller Ian Hart in his family home in Highgate. Sloe berries, known for their bitterness, are soaked in sugar and gin to create this deliciously rich and fruity liqueur with an extra dash of juniper. Sloe Gin dates back to the late 18th century when thorny sloe hedgerows were planted to protect fields from wandering animals. As sloes are too bitter to eat, they were soaked in gin and sugar in order to be more palatable. Sacred Spirits is a family run distillery based in Highgate, London. Founded in 2008 by Ian Hart and Hilary Whitney, the brand has established a strong reputation in the UK, Europe, and the USA. Just landing in Australia for the first time, Sacred spirits are made using organically sourced botanicals, vacuum distilled by hand at the Highgate Distillery, just a few yards from the famous cemetery. Sacred's drinks are characterised by an unmistakable quality and inimitable flavour. Sacred founder and distiller Ian Hart grew up in the same house and London suburb of Highgate where Sacred Spirits was born. Ian was always fascinated with chemistry, and first turned to exploring his love of French wine. He then switched gears to distilling gin, and after a few trial and errors, made his first bottle of gin (bottled by Hilary Whitney, his partner). They took the bottle to Ian's local pub and offered free samples and received direct, unfiltered feedback from some seasoned regulars. On recipe 23, the locals gave him the stamp of approval, and Sacred Spirits took off from there. Ian and Hilary refused to follow the normal idea of pot distillation was the only and best way to make gin. They proved that vacuum distilled spirits are every bit as flavourful (one could argue more!) than their pot distilled brethren. Vacuum distillation occurs at a much lower temperature, leaving the uncooked distillate lusher and fresher.

Sacred Old Tom Gin

Sacred Old Tom Gin is Sacred's interpretation of the 18th century staple, Old Tom Gin. With bold notes of juniper and naturally sweetened with liquorice root in the traditional manner. Perfect served with tonic or in a Martinez. Suggested Cocktail Add two drops of range bitters and two drops of maraschino liqueur to a chilled martini glass. Dodd's Organic London Dry Gin

First created in 2013, Dodd's is a unique marriage of two separate distillations; the bulk of the botanicals are distilled in a relatively small, 140-litre copper alembic still called 'Christina'. Then, the distillation of the more delicate botanicals (such as raspberry leaf) takes place in a small, bespoke 'Cold Vacuum' still, christened 'Little Albion'. The two spirits are blended for several weeks before bottling. The team's attention to detail extends to exquisite individually numbered, letterpress labels, which are printed on an old Heidelberg press and attached to each bottle by hand. Maybe the finest Dry Martini ingredient available in Australia today.
