Jean-Nicholas aimed to regain control over the land, ultimately leading to the production of estate-grown fruit and bottling under the Méo-Camuzet label. An instrumental figure in this reacquisition process was the iconic Burgundy producer, Henri Jayer. For approximately four decades, Jayer had worked the domaine's land under his own label. Following his retirement in 1988, Jayer graciously provided guidance and advice to Jean-Nicholas during the process of reclaiming the vines. Notably, Méo-Camuzet now proudly holds 14 hectares (35 acres) of vineyards, including a portion of the revered Cros Parantoux Premier Cru site, made famous by Jayer himself. This decision allows the winemakers the freedom to adapt their approach based on the unique characteristics of each vintage. The colour is intense and bright. On the nose, the first impression that arises is that of cherry. Then, woody and fine, spicy aromas appear, with an elegant hint of musk in some vintages. The flavours are extraordinary in their richness and harmony, neither too rough nor too heavy. The architecture of the wine is held up by fine-grained tannins, giving the body a silky texture. Acidity brings energy and liveliness to the whole. The aftertaste is a pure delight. After hand-picking and sorting, the grapes were crushed and left to macerate in temperature-controlled fermenters. Spontaneous fermentation with indigenous yeasts for a period of 2 to 3 weeks, with cap plunging and pump over. After pressing, the wine was racked to French oak barrels (20% new) for maturation of 14-18 months. For the last 130 years, Maison Joseph Drouhin has been in the hands of the Drouhin family.
