Penfolds Yattarna Chardonnay displays an initial bouquet of slate and wet stone, with nuances of lightly roasted almonds. Subtle hints of citrus, shrouded by nectarine and nashi pear fruits. Launched in 1998 with the 1995 vintage, Yattarna is the result of one of the most comprehensive, focused and highly publicised wine development projects ever conducted in Australia. The aspiration and independence of mind across generations of Penfolds winemakers inspired the ambition to create a white wine that would set the standard for ultra-fine Australian chardonnay. Selectively sourcing only the very best chardonnay fruit from cool-climate regions, coupled with clever winemaking, the style continues to evolve. Yattarna reflects Penfolds patience and continued commitment to its original goal, its very name being drawn from local indigenous language, meaning little by little, gradually. From some of the earliest plantings of Shiraz in the Yarra Valley with vines dating back to 1969. Shiraz (96%) co-fermented with small parcels of Viognier, Marsanne and Mataro aged 12 to 18 months in 50% new French oak barrels produces a wine that is perfumed and feminine with the tannins and acidity as integral to the wine as the fruit. CLOTILDE DAVENNE Chablis Vieilles Vignes Chablis is a superb winegrowing region entirely dedicated to Chardonnay. Clotilde Davenne Chablis comes from the village of Courgis, right next door to her winery in Prehy. Pale in colour with hints of green, the Chablis Vieilles Vignes offers a nice freshness and aromatic nose of fresh fruits, white flowers and dried fruit. The mineral aromas, of flint in particular, make it sing.

This cuvee offers a very beautiful balance between the different origins of our chardonnay. Cramant mostly of course (so structured and mineral), Chouilly in a large part (Mont Aigu for elegance) and a piece of Cuis (for the freshness and to sign Pierre Gimonnet).. The champagnes of Pierre Gimonnet & Fils are intricately assembled by masterful hands exclusively from enviably positioned and painstakingly tended old vines. Every cuvee sings its aspiration of 'precision, purity and minerality', each speaking articulately of its place in the northern Côte des Blancs through expressive, chalky minerality, without one molecule of detailout of place. With high-strung tension, crystalline structure and rapier-sharp precision, these are blanc de blancs champagnes charged with an energy that will sustain them long indeed.
