The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. The best Margaret River reds are true cellaring propositions, and this absolutely delicious Reserve-grade Shiraz from Evans & Tate is no exception.Deep, dark red. Savoury dark berry fruit with woody herbs and cedar oak. Minty blackcurrant and raspberry core depth in a mid-weight, intense and spicy frame, remaining youthful and primary with bright acidity and chalky tannins. Still a baby.

This vintage was co-fermented with 7.5% viognier to give the shiraz a more intensely perfumed bouquet and silkier texture. The palate has a wonderfully dry texture which gives a savoury character to the shiraz: dark plum, briary, brambly flavous and a fleshy, almost silky texture and a long, dry finish of considerable length.

Woodlands Cabernet Merlot is one of the regions best examples. The Watson brothers are the custodians of a family heritage in Margaret River that continues to this day. The Cabernet Merlot has attractive and complex aromas of dark berry and plum supported by well integrated vanillin oak. The palate shows similar characters with outstanding length of flavour and perfect balance. Drink now or cellar short term.

This Cabernet Merlot exhibits ripe cassis, dark chocolate and licorice aromas. High notes of cedary oak and bay leaf add further complexity. The palate unfolds in a myriad of layers of ripe blackcurrant and red fruit interwoven with savoury oak. The long and flavoursome finish is well supported by dry and fine grained tannins.
