Greystone Pinot Noir

Our Pinot Noir is estate grown at Greystone Vineyard and was harvested at full ripeness with the grapes in healthy condition. A small portion fermented as whole bunches whilst the majority was de-stemmed before small batch fermentation around 1.8 Tonne with 100% native yeasts. All batches were hand plunged up to three times daily to extract tannin, colour and promote good yeast health. Post fermentation maceration lasted for up to 3 weeks to allow ripe fruit tannins to soften, flavours to deepen and gain in complexity. Aged for 11 months in barrel with 30% being new French oak from selected and trusted cooperages. A very nice drop indeed.

Koyama William's Vineyard S Pinot Noir

Koyama William's Vineyard S Pinot Noir Waipara Aged in French Oak barrels (a small percentage is new) for 18 months and Malo-Lactic fermentation naturally happens. No fining or filtration is applied. 'A true expression of terroir and vintage.'Takahiro Koyama The wine is vinified only using grapes from the selected hillside blocks of Williams Vineyard. Clone UCD 5 and Abel were used for this wine. After being hand-harvested, the grapes are sorted again in the winery, and whole bunch clusters (about 70%) were fermented in open-top French Oak barrels. Hand plunged twice a day during fermentation and pressed in a hand-operated small basket press.

Pegasus Bay Prima Donna Pinot Noir

Pegasus Bay have about a dozen different clones of Pinot Noir. With their original plantings, these grow intermingled throughout the various blocks. The vines, many of which are nearly 30 years old and on their own roots, grow on a series of north facing, gradually descending terraces. Traditional Burgundian winemaking methods are used. Bright ruby colour. Its generous aromas and flavours dark cherries, blackberries, raspberries and mulberries, suffused with chocolate mocha and spice. There is an underlying savoury character, suggesting grilled meats and mushrooms with a hint of black olive tapenade. It is seductively light on entry but rapidly expands on the palate to become rich and mouth filling, while retaining elegance and poise. Silky tannins help draw out its lingering aftertaste.
